Celebrating the End of Summer with Mango Sticky Rice

One of my favorite things about summer is mangos. Living in Miami, I’m lucky to have access to a variety of mangos. My in-laws have at least three different types of mango trees in their backyard.  

And from May to September, over fifteen different types of mangos fruit in Miami. In the early to mid-summer, the rich, juicy Keitt mango ripens, and toward the end of the summer, the more fibrous Beverly mango comes into season. And while each variety of mango has its own unique texture and flavor profile, all mangos are perfect for this next recipe.

To celebrate the end of summer and mango season, I’ve decided to share my mango sticky rice recipe. Note that this recipe doesn’t require fresh-picked mangos, and it is just as good with frozen ones from last season. In fact, the frozen mangos make it seem more like dessert than a meal. 

To make my mango sticky rice, you only need about fifteen minutes. I love this recipe because it’s easy, nutritious, and it’s the perfect vegan breakfast, dessert, or snack. I usually make the rice earlier in the week and keep it in the fridge so I can have rice all week. But fresh rice works great and adds a warm contrast to the cold plant milk.

Ingredients: 

  • Rice 

    • Jasmine or sushi rice works best, but you can use whichever rice you prefer. 

  • Mango 

  • 1 tbsp Maple Syrup 

  • Plant Milk 

    • I like to use oat milk because it has a creamier texture, but any other plant milk works just as well  

  • Cinnamon to taste




Optional: 

  • Other fruit 

    • I like using other in-season fruit to pair with the mango 

  • A sprig of mint 


Directions: 

Like I said earlier, this recipe is extremely easy to make. First, cook your rice. And while your rice is cooking, you can cut up your mangos and other fruit. 

After the rice has finished cooking, let it cool for about five minutes. Next, scoop out the desired amount of rice and add some plant milk. I like to add enough plant milk to give the rice a cereal-like consistency but not so much where the milk completely covers the rice.

Next, add in the maple syrup. Mix the milk, rice, and maple syrup together, so that the sweetness of the maple syrup is evenly distributed. Now, top with mango, other fruit, and the mint sprig. And finally, dust with cinnamon. 

That’s it! Now you have a super easy vegan breakfast, dessert, or snack. Enjoy!
